Chicken & Mushroom Pasta Sauce Recipe

 A pasta sauce that rivals luxury pastas, where the heartiness of chicken meets cream.

Ingredients
  

  • 500 g Boneless Chicken (pan-fried and shredded beforehand)
  • 200 ml Heavy Cream
  • 100 g Cultivated Mushroom
  • 1 cup Tomato Puree
  • 1 Large Onion (small diced)
  • 1 clove Garlic (minced)
  • 3 tbsp Sunflower Oil
  • 1 tbsp Pepper Paste
  • 0.5 cup Water (Extra hot water if needed)
  • 1 tsp Salt

Method
 

Sautéing Process
  1. Heat 3 tbsp of sunflower oil in a wide pan over medium heat.
  2. Add the onions and garlic, and sauté for about 5 minutes.
Cooking the Paste
  1. When the onions soften, add 1 tsp of pepper paste.
  2. Continue to sauté, stirring constantly until the raw smell of the paste is gone (about 1 minute).
Binding with Tomatoes
  1. Add 1 cup of tomato puree and 1/2 cup of water to the pan.
  2. Let it simmer over medium-low heat for about 7 minutes so the sauce slightly reduces and thickens.
The Meeting of Mushrooms and Chicken
  1. Add the thinly sliced mushrooms to the sauce and cook for 6 minutes.
  2. Once the mushrooms have softened, add the pre-fried shredded chicken, salt, and spices; and cook for another 3 minutes.
  3. If the sauce looks too thick to you, add a splash of hot water or reserved pasta water.
The Cream Touch and Serving
  1. Turn the heat down to low. Slowly add the 200 ml of heavy cream to the sauce and stir until it gets a homogeneous color.
  2. Cook for 3 more minutes and turn off the stove.
  3. After resting your sauce for a few minutes, bring it together with your "al dente" boiled pasta.
